Please forgive the dramatic title to this section.

What I should really have said is:

I've designed and made a TON of products of the years. It doesn't really matter what the product is ...the first version will always have "issues" - this is GUARANTEED.

Because of the complexity, moving parts and tolerances of a knife ...the first version is going to be rough (and I mean rough!).

If I was to make a prediction, then I'd say we'll be talking in the range of about 40 to 50 "little things" that will need to be tweaked and changed. And then we'll have to iterate again ...and again ...and again.

This is all expected and all part of the journey. And you get to see all this ugly, behind-the-scenes stuff!
